INGREDIENTS LIST (Makes around 20 dumplings)

  • 150g (1.5 cup) wheat starch*
  • 50g (2-3 tbsp) tapioca starch*
  • 1/2 tsp salt
  • 100g (1/2 cup) beet purée (cooked) or 1 tbsp beet powder with 80ml (1/3 cup) water
  • 160ml (2/3 cup) water
  • 5g dang gui root (optional)
  • 3 jujube dates (optional)
  • 1.5 tbsp extra virgin olive oil
  • *if you have a hard time finding these starch, you can use all purpose flour, but it will not be gluten free anymore.

FOR FILLING

  • 1 cup chopped shiitake mushrooms
  • 2 cups thinly sliced Napa cabbage
  • 1/2 cup finely diced pumpkin or sweet potato
  • 1/3 cup chopped cilantro
  • 1 tbsp sesame seeds
  • 1/2 block of firm tofu
  • 2 tsp minced ginger
  • 2 tsp sesame oil
  • 1 tsp honey or molasses
  • 2 tbsp soy sauce or to taste
  • 1/3 tsp black or white pepper
  • 1 tbsp flax seed powder (optional)

ABOUT CHEF ZOEY GONG

Chef Zoey Gong is a Traditional Chinese Medicine chef and nutritionist. Born in Shanghai, China, she now lives in New York City, where she hosts pop-up medicinal dinners and collaborate with various brands to teach the wisdom of medicinal cooking.
