Join us for a fun live and interactive class Sonia Gambino as she shares the traditional Siciliay recipe of Eggplant Parmigiana.


Here are the ingredients for 2 - 3 people: 


  • 4 eggplants (black if possible)

  • tomato sauce (1.5l / 32 oz - one large jar)

  • One yellow onion

  • Parmigiano reggiano (75g / 1 cup)

  • Extra Virgin Olive Oil

  • Salt

  • pepper

  • Basil (2 cups)

  • Frying oil (one bottle)

  • Coarse salt

  • Mozzarella (2) or Caciocavallo (1) (optional)


About Sonia Gambino:  Sonia Gambino was born in Bronte, Sicily, a small village at the bottom of Etna volcano. She is a wine maker and has traveled all over the world to make wine: Chile, New Zealand, France, and Italy. She graduated from the University of Gastronomical Science in 2013 and is currently living in Sicily, where she's working on her dream project: building a urban farm.
