ABOUT THE RECIPE

INGREDIENTS
2 slices of stale bread
1 glass of milk
6 eggs
2 tbsp of Grana Padano
1 handful of parsley
salt & pepper (to taste)
1 tbsp butter
1 tbso extra virgin olive oil
A NOTE ON MEASUREMENTS
We work with chefs from all around the world, which is why we include both imperial (cups/ounces) and metric (grams) measurements. To achieve best results, we highly recommend that you utilize a kitchen scale and follow the metric measurements when possible.
PREPARATION
To make the bread omelette, start by removing the crust from the stale bread. Collect the crumb in a bowl and cover it with milk. Break the eggs into a bowl, beat them lightly with a fork then add the squeezed crumb, grated Grana Padano cheese, chopped parsley, salt and a sprinkle of pepper.
Mix carefully until the bread is well softened and all the ingredients are blended perfectly. In a non-stick pan, heat two tablespoons of oil and a knob of butter. Pour in the mixture and cook like a normal omelette, for about ten minutes or in any case until the underside is cooked and golden.
Turn it over and continue cooking for a couple of minutes to brown the other side as well. Transfer the bread omelette to a plate and serve warm or cold.
