ABOUT THE RECIPE
You'll love the savory flavor of these crispy dumplings. Our filling is made with shiitake mushrooms, napa cabbage, ginger and garlic for a classic combination of flavors. After you assemble the dumplings—a fun family activity—a quick pan-fry is all they need to achieve the perfect, golden-brown exterior. Enjoy these traditional dumplings as an appetizer, entree or even dessert!
½ cup of soy sauce
1 tablespoon sesame oil
½ squeezed lemon
1 teaspoon white or cane sugar
1 teaspoon minced ginger
2 cups (260g g) All purpose flour
½ cup (125 - 130 g) warm water
1 tablespoon cornstarch
1 cup fresh shiitake mushrooms, chopped
2 cups napa cabbage
2 tablespoons ginger, freshly grated
2 tablespoons soy sauce
2 tablespoons sesame oil
salt and pepper to taste
10-inch nonstick skillet or seasoned cast iron pan with a lid
Small rolling pin
Baking sheet lined with parchment
Dumpling steamer (optional)
A NOTE ON MEASUREMENTS
We work with chefs from all around the world, which is why we include both imperial (cups/ounces) and metric (grams) measurements. To achieve best results, we highly recommend that you utilize a kitchen scale and follow the metric measurements when possible.
Mix all ingredients in a small bowl and whisk well. Store in the fridge (up to a week).
Mix flour, water, and cornstarch in a bowl. Knead with your hand. When the ball is medium firm, let rest for 10-15 minutes, covered. Knead it into a smooth ball. Let it rest for 30 minutes.
Make a loop / rope with the dough. Cut it into equal sections. Press each section into a small disc with the palm of your hand. Using a rolling pin, flatten each dough into a thin disc.
Prepare your desired filling recipe by combining ingredients in a bowl and set aside.
