Let’s travel the world, we’e going to Africa! Chef Chidimma Ozokwere will teach us how to prepare Nigeria’s famous Egusi soup. Egusi is a West African name for seeds of plants like squash, melons, and gourds.  When dried, they become a staple ingredient in many dishes. Particularly in Nigerian culture, Egusi is a popular with pounded yam. These seeds are rich in fat and protein and add these essential nutrients into West African Cuisine.

Ingredients

  • 1 cup Egusi (dried melon seeds)
  • 1 paprika peppers or chili bell peppers
  • 3 scotch bonnets
  • 1 medium tomatoes
  • 1/2 big onion bulb
  • 6 tbsp palm oil
  • 3-4 pcs beef cut
  • 3-4 pcs goat meat cut
  • 1 pcs dried fish
  • 1/4 cup ground crayfish
  • 2 Beef seasoning cubes
  • 3/4 cup shredded spinach or vegetable of choice
  • Salt to taste
  • Water

To Serve

  • 1 cup rice

Chidimma Ozokwere, 24, is a Nigerian self taught cook and food blogger. Cooking and exploring dishes from different parts of the world started as a hobby. She is passionate about teaching people how to prepare and explore amazing Nigerian dishes.
