About the dish

Vietnamese Fried Rolls (Nem rán) is an iconic dish that is known by many names. In Vietnam, it is called “nem rán” in the North, “chả ram” in the Central region, and “chả giò” in the South. In English-speaking countries, it can be called “spring rolls”, “fried spring rolls”, or “egg rolls”. Making nem rán at home always feels like a special event because they take a lot of preparation. We eat them for family get-togethers, special occasions, and always for Tất Niên- the family dinner on the eve of Tết – Vietnamese/Lunar New Year.

About the chef

Born and bred in Hanoi, Thao immigrated to the US when she was 18. Hungry for the flavors of Hanoi, where she grew up, she started hosting dinners and gatherings as a way of cooking and sharing dishes from her hometown. In 2019, she and partner Nam Nguyen launched a quarterly pop-up dinner series called Tóp Tép—an homage to Vietnamese, and especially Hanoian, cuisine - Thao is now the General Manager at the Butcher’s Daughter Venice. She continues to pursue her passion of bringing people together—one dinner at a time—and sharing the familiar flavors of home with Los Angeles.
