It is the ultimate contrast. One is crunchy and refreshing, the other is creamy and sharp. To make a really great cucumber & feta salad, the trick is all in how you cut things. Instead of slicing everything paper-thin, keeping the pieces a bit thicker gives you a much better bite. Here's the first idea for your Cucumber & Feta salad!


The Mint and Garlic Salad

  • 2 large English cucumbers, cut into thick chunks

  • 1 cup good feta cheese, cut into small cubes

  • A handful of fresh mint leaves, roughly torn

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar

  • 1 small garlic clove, finely grated

  • A pinch of flaky sea salt


Instead of crumbling the feta into tiny pieces, keeping it in cubes means you get a distinct bite of cheese with every piece of cucumber. Start by mixing your olive oil, vinegar, and grated garlic right in the bottom of your serving bowl. Toss the cucumber chunks into that dressing until they are completely coated, then gently fold in the feta cubes and torn mint so the cheese does not break apart too much. Let it sit on the counter for about ten minutes before you eat. The cucumbers will release a little bit of their own juice, which mixes with the olive oil to create the best dressing for dipping crusty bread.


If you want to try something a little different, you can actually put your cucumbers on the stove. It sounds strange, but searing them quickly in a hot pan caramelizes the edges and gives them a completely new flavor that tastes amazing with melted feta.


The Warm Pan-Seared and Hot Honey Salad

  • 3 small Persian cucumbers, cut in half lengthwise

  • 1/2 cup feta cheese, crumbled

  • 2 tablespoons olive oil

  • 1 tablespoon hot honey

  • Juice of half a lime

  • A handful of walnuts, chopped and toasted

  • Salt and black pepper to taste


Get a skillet or a grill pan really hot on your stove. Rub a tiny bit of olive oil on the cut sides of your cucumbers and place them face-down in the pan. Leave them alone for about two minutes until they get a nice, dark char on the flat side, but are still crunchy in the middle. Take them out, chop them into bite-sized pieces, and put them on a plate. Scatter the feta and toasted walnuts over the top, then drizzle everything with hot honey and fresh lime juice. The heat from the cucumbers softens the feta just enough to make it super creamy, and the sweet heat from the honey ties it all together.


Both of these ideas show that you do not need a massive grocery list to make a great lunch. It is just about mixing up your textures, adding a little heat, and letting a few great ingredients do all the work for you.
