ABOUT THE RECIPE
INGREDIENTS
8 to 12 kiwi fruit
1 cup sugar
2 cups water
2 tablespoons lemon juice
2 tablespoons vodka
A NOTE ON MEASUREMENTS
We work with chefs from all around the world, which is why we include both imperial (cups/ounces) and metric (grams) measurements. To achieve best results, we highly recommend that you utilize a kitchen scale and follow the metric measurements when possible.
PREPARATION
Carefully peel the kiwi fruit and discard the peelings. Slice the fruit. Put the slices into the container of a food processor or electric blender and blend as finely as possible. There should be about two cups.
Combine the sugar and water in a saucepan and bring to the boil. Let simmer for five minutes. Let cool.
Combine the syrup and kiwi puree. Add the lemon juice and pour into the container of a hand-cranked or electric ice-cream freezer. Freeze according to the manufacturer's instructions.
When the mixture starts to thicken, add the vodka and continue freezing until frozen.
