ABOUT THE RECIPE
Madre is an artisanal Mezcal, made by hand in the rolling hills of the Oaxacan Sierra: "Watching over the land for centuries, our Mezcaleros started distilling the spirit of Mezcal for the intent of personal guidance and celebration. They would like to share that spirit with respect and gratitude".
INGREDIENTS
Madre Paloma
salt & chili powder, for the rim (optional)
2 oz (60 ml) Madre Mezcal
0.5 oz (15 ml) lime juice
1 oz (30 ml) grapefruit juice
0.5 oz (15 ml) agave syrup
6 oz (180 ml) sparkling water
ice
Beach Borracho
2 oz Madre Mezcal
1 oz (30 ml) lime juice
1 oz (30 ml) pineapple juice (plus a frond for garnish, optional)
0.5 oz (15 ml) agave syrup
ice
A NOTE ON MEASUREMENTS
We work with chefs from all around the world, which is why we include both imperial (cups/ounces) and metric (grams) measurements. To achieve best results, we highly recommend that you utilize a kitchen scale and follow the metric measurements when possible.
PREPARATION
For the Madre Paloma
Dip the rim of the glass in water and then into a dish filled with salt and chili powder. Add all the ingredients over ice and stir.
For the Beach Borracho
Add all ingredients into a shaker (or a mason jar with a lid) and shake with ice until cold, 15-30 seconds. Strain into rocks glass filled with ice. Garnish with a pineapple frond.
