ABOUT THE RECIPE
You'll love the savory flavor of these crispy dumplings. Our filling is made with shiitake mushrooms, napa cabbage, ginger and garlic for a classic combination of flavors. After you assemble the dumplings—a fun family activity—a quick pan-fry is all they need to achieve the perfect, golden-brown exterior. Enjoy these traditional dumplings as an appetizer, entree or even dessert!
2 tablespoon soy sauce
2 tablespoon rice vinegar
1-2 garlic cloves, minced
½ tablespoon sesame oil
¾ cup (100 g) all purpose flour
¼ cup (50 g) warm water
1 cup soaked shiitake mushrooms, chopped
2 cups cone cabbage, chopped
2 tablespoons ginger, freshly grated
2 tablespoons plant oil
1 tablespoon soy sauce
1 tablespoon oyster sauce
½ tablespoon sugar
½ teaspoon black or white pepper

Damp dish towel
Small rolling pin
Pot and steamer
Parchment paper or cabbage / salad leaves
A NOTE ON MEASUREMENTS
We work with chefs from all around the world, which is why we include both imperial (cups/ounces) and metric (grams) measurements. To achieve best results, we highly recommend that you utilize a kitchen scale and follow the metric measurements when possible.
Mix all ingredients in a small bowl and whisk well. Store in the fridge (up to a week).
Mix flour and water in a bowl. Knead with your hand. When the ball is medium firm, let rest for 10-15 minutes, covered with a damp towel.
Make a loop / rope with the dough. Cut it into 16 equal sections. Press each section into a small disc with the palm of your hand. Using a rolling pin, flatten each dough into a thin disc.
Prepare your filling by chopping cabbage, mushrooms, and ginger. Add soy sauce, oyster sauce, sugar, ground pepper, and plant oil.
