4 Italian-Inspired Mother's Day Recipes


1. Italian-Style Frittata

We're kicking off the brunch with a classic Italian dish, the Frittata. Light, fluffy, and packed with veggies, this is a great start to a Mother's Day feast.


Ingredients:

  • 8 eggs

  • 1/2 cup Parmesan cheese

  • 1 cup spinach

  • 1/2 cup bell peppers

  • 1/2 cup cherry tomatoes

  • Salt and pepper to taste

Whisk together the eggs, cheese, salt, and pepper. Sauté the veggies in a bit of olive oil, then pour the egg mixture over them. Cook over medium heat until it's just about set, then pop it under the broiler to finish. Voila! A perfect, golden Frittata.


2. Bruschetta with Fresh Tomatoes and Basil

Next up, we have a vibrant Bruschetta recipe that'll bring the sunshine of Italy right to your brunch table.


Ingredients:

  • 1 baguette

  • 2 cups fresh tomatoes

  • 1 cup fresh basil

  • 2 cloves garlic

  • 1/4 cup olive oil

  • 1/2 cup strong coffee

  • 2 tbsp cocoa powder

  • 1/4 cup sugar

  • 1 tsp vanilla extract

Prepare the pancakes as usual, but add in a touch of the coffee for an extra flavor kick. Mix the mascarpone with sugar and vanilla until it's smooth and creamy. Stack your pancakes, layering them with the mascarpone mixture.


Finish with a dusting of cocoa powder, and there you have it – the ultimate sweet treat for Mom!


4. Peach Bellini

Ingredients:

  • 2 ripe peaches

  • 1 bottle of Prosecco

  • 1 lemon

  • 2 tablespoons of sugar

First, you'll need to puree the peaches. Peel them, remove the pit, and blend until smooth. Add the sugar and a squeeze of fresh lemon juice, and blend again until well mixed.


Next, chill the peach puree and a bottle of Prosecco in the fridge. Once they're nice and cold, pour about two tablespoons of the peach puree into a champagne flute, then slowly top it up with Prosecco.


Gently stir, and you've got a beautifully elegant Peach Bellini that's bursting with the flavors of Italy. Just remember to save some Prosecco for a toast to the wonderful woman you're celebrating!
