This version is dairy-free, made with full-fat coconut milk for a creamy texture and subtle coconut flavour. If you prefer a dairy-based version, you can swap the coconut milk with the same amount of whole milk and heavy cream (1 can = approx. 1¾ cups), ideally using a 50/50 mix for richness.
Ingredients:
2 cans full-fat coconut milk
¾ cup sugar
1 tablespoon cornstarch
1 tablespoon vanilla extract
Pinch of salt
Directions:
Combine coconut milk, sugar, slat, and cornstarch in a saucepan.
Place over medium heat and cook, stirring constantly, until it gently bubbles and thickens slightly.
Remove from heat and stir in vanilla extract.
Let cool to room temperature, then cover and refrigerate over night.
Churn the gelato into an ice cream maker (20-25 minutes).
Transfer to a container and freeze for at least one hour.
