For those of you who like to know exactly what goes into your gelato, here's a simple recipe to enjoy.


This version is dairy-free, made with full-fat coconut milk for a creamy texture and subtle coconut flavour. If you prefer a dairy-based version, you can swap the coconut milk with the same amount of whole milk and heavy cream (1 can = approx. 1¾ cups), ideally using a 50/50 mix for richness.


Ingredients:


  • 2 cans full-fat coconut milk

  • ¾ cup sugar

  • 1 tablespoon cornstarch

  • 1 tablespoon vanilla extract

  • Pinch of salt


Directions:


  • Combine coconut milk, sugar, slat, and cornstarch in a saucepan.

  • Place over medium heat and cook, stirring constantly, until it gently bubbles and thickens slightly.

  • Remove from heat and stir in vanilla extract.

  • Let cool to room temperature, then cover and refrigerate over night.

  • Churn the gelato into an ice cream maker (20-25 minutes).

  • Transfer to a container and freeze for at least one hour.

  • Enjoy!
