When we think about dining in the Roman Empire, our minds often conjure images of toga-clad aristocrats reclining on lavish couches, indulging in extravagant banquets. And while that may be partially true, Roman cuisine was a diverse blend of flavors and ingredients that catered to the tastes of both the wealthy and the common folk. A Breadbasket of the Empire Bread was the cornerstone of the Roman diet. The common man's daily sustenance came in the form of a rustic loaf, often dipped in wine for added flavor. Ingredients: 2 large russet potatoes (about 1 pound each) 1 1/2 cups all-purpose flour, plus extra for dusting 1 large egg, lightly beaten 1/2 teaspoon salt 4 tablespoons unsalted butter Fresh sage leaves Grated Parmesan cheese, for serving Salt and black pepper to taste Instructions: Cook the Potatoes: Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork a few times and bake them on a baking sheet for about 1 hour or until they are tender when pierced with a fork. Alternatively, you can boil the potatoes until tender, but baking helps to keep them drier. Prepare the Gnocchi Dough: Once the potatoes are cooked and cool enough to handle, peel off the skin and pass the flesh through a potato ricer or mash them until smooth. Let the mashed potatoes cool completely. In a large mixing bowl, combine the cooled mashed potatoes, beaten egg, salt, and flour. Mix gently until a dough forms. Knead the Dough: Transfer the dough onto a lightly floured surface and knead it gently until smooth. Be careful not to over-knead, as it can make the gnocchi dense. Shape the Gnocchi: Divide the dough into smaller portions. Roll each portion into a long, thin rope, about 1/2 inch in diameter. Cut the ropes into 3/4-inch pieces. To give the gnocchi their classic shape, you can press each piece gently with a fork or use a gnocchi board to make ridges. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook them until they float to the surface, which usually takes about 2-3 minutes. Use a slotted spoon to transfer the cooked gnocchi to a plate. Make the Sage Butter Sauce: In a separate skillet, melt the butter over medium heat. Add the fresh sage leaves and let them cook until they become crispy and the butter turns a golden brown color. Combine and Serve: Add the cooked gnocchi to the skillet with the sage butter sauce. Toss everything gently to coat the gnocchi evenly. Season with salt and black pepper to taste. Serve: Transfer the handmade potato gnocchi to serving plates. Sprinkle with grated Parmesan cheese and garnish with extra sage leaves if desired. In just about 40 minutes, you'll be treated to a culinary masterpiece loved by all—say hello to the classic Italian family favorite! This easy weeknight dinner embodies the heart and soul of Italian cuisine, cherished in homes across generations with delightful tweaks and personal touches to suit each family's tastes. Ingredients: 4 Italian sausage links (sweet or spicy, based on preference) 2 bell peppers (red, green, or a mix), sliced 1 large onion, thinly sliced 2 tablespoons olive oil 2 cloves garlic, minced 1 teaspoon dried oregano 1 teaspoon dried basil Salt and black pepper to taste Crusty Italian rolls or cooked pasta, for serving Fresh parsley, chopped, for garnish (optional) Instructions: Cook the Italian Sausage: In a large skillet over medium heat, add 1 tablespoon of olive oil. Prepare the Filling: In a mixing bowl, combine the ricotta cheese, thawed and drained spinach, half of the shredded mozzarella cheese, grated Parmesan cheese, beaten egg, dried basil, dried oregano, garlic powder, salt, and black pepper. Mix well until all the ingredients are thoroughly combined. Stuff the Shells: Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish. Take each cooked pasta shell and spoon a generous amount of the spinach and ricotta filling into it. Arrange the stuffed shells in the baking dish. Add the Sauce: Pour the remaining marinara sauce over the stuffed shells, covering them evenly. Sprinkle the remaining shredded mozzarella cheese over the top. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly, with a golden brown color. Serve: Garnish with fresh basil leaves if desired. Add the spaghetti or bucatini pasta and cook according to the package instructions until it is al dente. Reserve about 1 cup of pasta water before draining the pasta. Prepare the Cheese and Pepper Mixture: In a separate bowl, mix the grated Pecorino Romano cheese and coarsely ground black pepper together. Combine Pasta and Cheese Mixture: Once the pasta is cooked, drain it, reserving a cup of pasta water. Return the hot, drained pasta to the pot. Building the perfect kitchen is a process that comes together one piece at a time. Whether you’re freshly out on your own and looking to start from the ground up, or you’re a (pardon the pun) *seasoned* professional, it’s always fun to get some extra inspiration. Keep scrolling to see the 10 kitchen supplies we couldn't possibly live without. 1. Stand Mixer Starting it off strong with the one item that you’re almost guaranteed to see on every wedding registry for the last decades. There’s a reason the stand mixer is so popular, in addition to coming in any color you could desire, it’s the versatility that keeps it in use time and time again. Not only can you whip, beat, stir, mix, cream, and knead, but additional attachments allow you to spiralize vegetables, grind meat and make homemade pasta. Sure, you could stand there with a hand mixer for the full 10 minutes that your almond cake recipe calls for, but what if you didn’t have to? It also takes the work out of recipes that call for a little more elbow grease, such as heavy dough or meat shredding. You read that right: people are using their stand mixer to shred cooked meat in a fraction of the time that it takes to do it by hand. In terms of price, you can drop some serious dough (yep, we did it again) or just as easily find a mixer within your budget. Just be aware that some attachments will be easier to find for certain models. 2. High Quality Knife Having the right tools for the job can make or break your culinary endeavor. Sure, you can have a knife for every occasion, but if you’re a chef-on-a-budget or just starting out, a high quality, multipurpose knife will be your best friend. Food Thermometer A reliable food thermometer is one of those tools that there’s really no replacement for. The best way to ensure your food is cooked to safe temperatures, to check the temperature of a steak to prevent cutting right into it, and let’s not forget baking and candy-making. Depending on your needs, you really don’t have to break the bank, however many fancier models are available if you’re ready to take things to the next level. 4. Kitchen Shears Kitchen shears don’t get much fanfare, but they remain a staple in our kitchens because of their impressive versatility. Do you hate trying to wrangle fresh herbs to cut with a knife? Try snipping small slivers with the shears. One of our favorite uses is for cutting small pieces of bacon for sautéing; simply hold over the pan and slice right in! They’re also a solution to those too- large pieces of food that sneak into the pan too soon. Leave them where they are and grab your trusty shears, simply snip the food right in the pan and move along. 5. Rice Cooker Raise your hand if you’ve ever been personally victimized by rice cooked on the stove. Yeah, us too. That’s why we have a rice cooker solidly holding its well-deserved place in our hearts and on this list. Whether you opt for a basic one-function option, or want to go a bit further, rice cookers have one job, and they do it really well. Fluffy, perfectly cooked rice without the mushy, soggy mess that stirring in a pot can leave you with. Yes, please! 6. Gnocchi Board Making gnocchi is like making puff pastry: nobody does it because it’s easy, they do it because it’s worth it. If you’re going to put the time and love into making arguably one of the best carb forms to come out of Italy, we like to stick with tradition. Like the cherry on top of a sundae, those small ridges and shell-like curve add that touch of elegance that only comes from a gnocchi board. Yes, you can use a fork in a pinch, but we can’t promise a few Italian Nonnas won’t shed a tear. Get your own wooden gnocchi board here! 7. Cheesecloth This is one of those items that you probably won’t think about on a regular basis, but when you need it, you NEED it. Useful for more than just straining cheese (but that alone is a worthy cause), this can strain juices, clarified butter, homemade oat or almond milk, grated vegetables for baking, you name it. 8. Roman Style Pizza Al Taglio Pan You know the saying, “When in Rome, do as the Romans do.” We’re trusting the inventors of the pizza on this one, but allow us to explain why… Blue iron metal comes from the same family of metals as cast iron, but with several key differences, the most noticeable one is that it is much lighter than cast iron. Chef Julia Sullivan summed it up best when she said: “Carbon steel is the best of both worlds. You get the lightweight properties of stainless steel…and the heat conductivity and retention you would with cast iron. It’s a thinner metal, which means it can heat up really quickly and conduct heat even better than cast iron.” To get that classic, hearty, crispy crust that pizza al taglio is known for, you need to use the right pan. Butter Bell Is there anything better than freshly baked bread with butter? If you agree, then you need a butter bell: the French invention you might have never heard of. Instead of keeping your butter out on the counter or in the refrigerator, the butter bell solves the problem of having to choose between spreadability and freshness. The butter bell’s design utilizes a water seal to preserve the butter from otherwise being exposed to the elements, while retaining the benefit of room-temperature, soft deliciousness. Another point to the butter bell? How beautiful it looks on your countertop. You can find just about any style of butter bell to compliment your particular kitchen. Here's how to make a quick and delicious hummus, recipe by Chef Michael Solomonov, taken from his Israeli Soul Cookbook. 5-Minute Hummus with Quick Tehina Sauce 🇮🇱 By Chef Michael Solomonov 🇮🇱From Zahav: Israeli Soul Cookbook PHOTO BY BOBBI LIN INGREDIENTS Makes about 4 cups (4 servings) QUICK TEHINA SAUCE 1garlic clove Juice of 1 lemon (16 oz) jar tehina 1 tablespoon kosher salt 1 teaspoon ground cumin 1 to 1 1/2 cups ice water HUMMUS 1(15-ounce) cans chickpeas, drained and rinsed INSTRUCTIONS MAKE TEHINA SAUCE Nick off a piece of the garlic (about a quarter of the clove) and drop it into a food processor. Squeeze the lemon juice into the food processor. Pour the tehina on top, making sure to scrape it all out of the container, and add the salt and cumin. Process until the mixture looks peanut-buttery, about 1 minute. Stream in the ice water, a little at a time, with the motor running. Process just until the mixture is smooth and creamy and lightens to the color of dry sand. Now you have Quick Tehina Sauce! MAKE THE HUMMUS Add the chickpeas to the tehina sauce and process for about 3 minutes, scraping the sides of the bowl as you go, until the chickpeas are completely blended and the hummus is smooth and uniform in color. Cooking school may not be right for everyone, but there are some culinary school tips and techniques that anyone can use while cooking at home, without investing in a white chef's coat! Join us as we unveil the top 10 delectable tips we've acquired during our time in culinary school, each a culinary gem that's ready to infuse your cooking endeavors with a touch of professional finesse. Whether you're a seasoned home cook or a curious novice, these insights are bound to add a pinch of gourmet magic to your culinary creations. Here are 10 tasty tips we learned in culinary school: 1. Keep Your Knives Sharp The first thing we did in culinary school was learn how to chop carrots and onions. The second thing? Learn how to properly sharpen a knife. It’s important to realize that a sharp knife makes chopping so much faster and easier. (Plus, you don’t need to use as much force when your knife is sharp, which means it’s safer, too.) Plenty of kitchen specialty stores will sharpen your knives for a reasonable price–so it’s definitely worth bringing them in when they’re getting dull. 2. Opt for the *Really Good* Knife Set Speaking of knives… Knives are probably the most useful thing in your kitchen, so it's important to get a high-quality set that will last you a long time. And, whatever you do, don’t put your cutting knives in the dishwasher! 3. Keep Your Cutting Board in Place with a Wet Towel Chopping on a cutting board that keeps sliding all over the counter can be so annoying. Use a damp paper towel or dish towel to keep it in place. You can keep it stable by getting a paper towel, soaking it in water, wringing it out, then laying it out flat before putting the board down. Just like that. The damp towel acts a grip, preventing your cutting board from moving all around while you’re trying to use it. 4. Practice the Art of Mise en Place Mise en place (MEEZ ahn plahs) is the French term for “having all your ingredients measured, cut, peeled, sliced, grated, etc. before you start cooking.” Pans and mixing bowls are placed out. Tools and equipment are hooked up and ready. Ingredients are measured and prepped. It is this method that allows chefs to get meals on the table so quickly. While you don't need to be so precise at home, it's much easier to follow a recipe when you have your ingredients all prepared beforehand. Simply put: Prep all your ingredients before you start cooking. That way, you’re not scrambling around chopping onions while the garlic burns or the water boils over. 5. Toast Your Spices and Nuts Even though it may seem unnecessary, toasting actually perks up the essential oils and intensifies the flavor of a recipe. For more info, check out the L.A. If your dish is missing a little something, but you can’t put your finger on what it is, chances are it could use a little bit of acidity–such as wine, lemon juice or orange juice. 7. When in Doubt, Add Salt Have you ever thought about why you like salt so much? Salt brings out flavor, which means well-salted food tastes more like itself than under-salted food. Season each new ingredient with a tiny bit of salt each time you add them to a recipe to really maximize the flavors. 8. Clean as You Cook You’ve probably heard this one before, but another great skill you’ll learn in culinary school is cleaning your space as you cook. Wipe down your cutting board after you finish preparing each ingredient. Put pots, pans, and utensils in the sink or dishwasher as soon as you’re done using them. And wash your hands often. There probably isn’t a cooking instructor looking over your shoulder as you clean, be as organized and tidy as if there were! 9. Buy a Food Scraper Cooks often use their knives to scrape whatever they've chopped into a bowl after they've finished chopping. Avoid doing this! In addition to being dangerous, it will also quickly dull your knife blade. Make it easy on yourself by investing in a bench scraper–you can use it to remove food scraps and transfer stuff from the cutting board to pots and pans. 10. Never Throw Away Kitchen Scraps! When it comes to making stock, leftover bones and scraps are literal kitchen gold. You can make chicken stock with nothing but bones if you want. You can also make beef stock with beef bones, fish stock with fish bones and scraps, and so on. Not only is it cheaper than buying stock, but it’s also often tastier, and lets you cut down on waste. These days, we collect bones and vegetable scraps in a sealed gallon bag in the freezer, then make a few quarts of stock every time the bag fills up.
