    Looking for a new savory staple to add to your breakfast palate? Look no further than chilaquiles! This easy, traditional Mexican dish is sure to get you out of bed. What is the history of chilaquiles? With indigenous origins, chilaquiles takes form amongst staple ingredients in Mexican cuisine . Derived from words meaning “chilis and greens,” they are highly customizable and always delicious. With their origin from corn tortillas to the various toppings you might see now, it’s a great way to use all the ingredients in your pantry or fridge. Often served for breakfast or brunch, chilaquiles are known as a comfort food–and a great way to use leftovers! Delicious, time-saving, and not wasting food–what more could we ask for? What is the recipe? Ingredients Corn tortillas (cut into quarters) Vegetable or canola oil Green sauce (made from tomatillos) or red sauce (made from tomatoes) Cheese of your choice Sour cream Cilantro  Sliced onions Avocado slices Shredded chicken or fried eggs Recipe Start off by heating ¼ inch of oil in a large skillet, then fry the tortilla quarters until golden brown. This should take about 2-3 minutes per side. Remove the fried tortillas and set them aside Optional step: if you’d like to make your own sauce, go ahead and do so here! Simmer your sauce of choice for about 10 minutes (until it thickens slightly). Add the fried tortilla pieces to the skillet with the sauce for about 2-3 minutes.  Top with cheese, sour cream, sliced onions, cilantro, and avocado. You can also add shredded chicken or fried eggs! Serve immediately, and enjoy! You can also serve chilaquiles with a side of rice or beans. Besides your tortillas and sauce, this dish is completely customizable. What are the ingredients? Listed below are the ingredients for your spooky brownies! 200g butter 200g chopped dark chocolate 100g chopped milk chocolate  100g chopped white chocolate 4 eggs 350g granulated sugar 100g plain flour 50g cocoa powder Chocolate sandwich cookies (however many brownies you’d like!) Sugar-coated chocolates (however many brownies you’d like!) Icing pens I have the ingredients, what are the instructions? Heat the oven to 356 degrees Fahrenheit (or 180 degrees Celsius). Line a brownie tin. Melt the butter and dark chocolate in a bowl set over a small pan of simmering water. Stir until smooth, then leave to cool for 10 minutes. Beat the eggs and sugar with an electric whisk. Pour the cooled dark chocolate mixture in. Sift over the flour and cocoa, add the milk chocolate, and fold everything together. Pour the mixture into the prepared tin and bake for 35-40 minutes. Melt the white chocolate and stir until smooth. Dip each chocolate sandwich cookie to cover one side. Stick a sugar-coated chocolate in the center of each. When the chocolate is fully dry, using the icing pens to draw on a pupil and red veins onto each eyeball. Once the brownies are done, gently push the eyeballs (the chocolate covered sandwiches) into the brownie surface. Cut into squares, and enjoy your spooky treat! What are the common ingredients, and what are some substitutes? Some common ingredients don’t require any substitutes: Chilies Tomatoes Corn Beans Avocado Cilantro Onions Garlic Cheese Lime Spices While others do! Listed below are a few of the common meat-based ingredients and their substitutes. Chorizo: this sausage has multiple substitutes, which include soy or tofu-based chorizo. Chicken: look for jackfruit, or chickpeas! Pork: mushroom or jackfruit can easily be seasoned in the same way. Beef: Lentils and other vegetables can provide the texture you’re looking for. Lard: coconut oil or olive oil is an easy fix for this one! Now that we’ve covered the basics, let’s cut to the chase–the recipes you’ve been waiting for. What are some of the recipes? We gathered a variety of different dishes for your celebration! This list offers some unique new flavors, while also keeping to the traditional elements. Mooli and pomegranate ceviche A good evening always begins with ceviche and chips. One of the most essential parts of ceviche is to keep the fresh, citrusy flavor alive to complement the chips, and this does that perfectly. For the sauce: 1 onion, ½ habanero chili, lime juice, and olive oil (cook and blend) For the ceviche: diced persimmon, diced mooli (radish), pomegranate seeds, ½ avocado, olive oil Toss the two together and you’ve got the perfect appetizer! Tajin cauliflower bites In an evening full of dining, laughter, and talking, bite-sized food is a must. These tajin cauliflower bites are the perfect vegetarian option! Mix together some olive oil, chipotle paste, and garlic. After seasoning with salt, mix in the cauliflower! Roast for 35-40 minutes at 200 degrees Celsius or around 400 degrees Fahrenheit. Scatter Tajin once roasted. Feel free to drizzle your bites with some sour cream and chipotle paste! Crusted halloumi tacos with pico de gallo Otherwise known as the star of the show. Get your classic pico de gallo ready! Mix together cumin and paprika and rub over the halloumi. Heat a pan and add the halloumi, frying until golden on each side. Grab your tortillas and other taco add-ons! Add slices of halloumi and your pico de gallo, and enjoy. Flan Get out these ingredients the night before, for the most delicious dessert for the following day. Cook caster sugar with 2 tablespoons of water, and cook over high heat until the sugar dissolves. Coat a flan tin with the dissolved mixture, and cool. Whisk 5 eggs and ½ teaspoons of vanilla together along with a 400g can of condensed milk, 400 ml of evaporated milk, and 150 ml of whole milk. Pour the mixture into the tin and cover with foil.  Place the tin into a 5cm tall baking tray and pour boiling water until it reaches halfway up the side of the tin. Bake this tray for 50 minutes in the oven. Remove the tin and the foil, and place the tin to cool for 30 minutes. Afterward, cover and chill overnight! Invert, cut, and serve! Mexican hot chocolate A classic, no matter what time of year. Pour milk into a saucepan and add cinnamon sticks. Stir for about 5 minutes. Remove the cinnamon sticks, adding cocoa powder, vanilla, chili powder, and sugar. Remove from heat and whisk until frothy! Pour into mugs and garnish with new cinnamon sticks. A perfect nightcap! No-bake and sure to please–what more could you want? What is limoncello? Limoncello is an Italian lemon liqueur that is typically served as an after-dinner digestif. With this dessert, you get a sweet treat in combination with that! With limoncello’s bright flavour and tiramisu’s richer taste, the combination of these two creates a great contrast that you don’t want to miss. What better way to celebrate that than with a delicious dessert? Read on for the recipe. What ingredients do I need? For ease of reading, we’ve split up the ingredients into three sections of the preparation process. For the limoncello syrup: 1 cup water 1 cup sugar ½ cup limoncello liqueur For the mascarpone filling: 4 egg yolks ½ cup sugar ¼ cup limoncello liqueur 2 cups mascarpone cheese at room temp. 1 cup heavy cream For assembly: 1 package of ladyfingers Zest (from 2 lemons) Fresh mint leaves (for garnish) With these simple ingredients, you are all set to create your delectable dish! What is the recipe? Prepare the limoncello syrup  by combining water and sugar in a saucepan. Bring to a boil, stirring until the sugar is completely dissolved. Once you remove it from the heat and let it cool, stir in the limoncello liqueur! Make the mascarpone filling  by whisking together the egg yolks and sugar. Place the bowl over a pot of simmering water and whisk until the mixture is slightly thickened. Once removed from the heat, whisk the mixture in the limoncello liqueur.  Beat the mascarpone cheese until smooth, adding the egg yolk mixture gradually until combined. Whip the heavy cream in a separate bowl. Combine this with the mascarpone mixture. Create the tiramisu  by dipping each ladyfinger into the limoncello syrup. Arrange a layer of the ladyfingers in a dish of your preference, then spread half of the mascarpone filling over the ladyfingers. Repeat this process once more. Cover and refrigerate  for at least a few hours (overnight is ideal) to allow the tiramisu to set. Sprinkle with lemon zest and garnish with mint leaves! Serve, and enjoy . Feel free to add other toppings, such as white chocolate chip shavings or something with a bit more texture. Customize your dessert until it truly feels like your own!
